Focaccia Bread

This recipe is always a success. I had it from Dutch Girl Cooking – www.kayotic.nl/blog and as always, I made it a bit of myself. But I do not want to brag about this recipe, as if I have invented it. It is Kay’s recipe, with a little bit of me added. :-)

Ingredients:

  • 3 1/2 cup of flour
  • 1 tblsp yeast (instant)
  • 2 tbsp honey or sugar
  • 2 teaspoon salt
  • A teaspoon Italian herbs
  • 3 garlic gloves
  • 1 cup warm water (250 ml)
  • Fresh or dried rosemary
  • 3 tbsp Olive oil
  • Red onion; black diced olives, dried tomatoes or thinly sliced sweet bell pepper in a jar.

Directions:

  1. Mix the flour, yeast and salt together in a food processor or by hand in a bowl for a few seconds.
  2. Add the oil, honey and kneed it thoroughly.
  3. Add the Italian herbs and mix it.
  4. Add the warm water and kneed the dough into a ball.
  5. Sprinkle a little flour on cutting board and transfer the dough to it.
  6. Kneed the dough for 5 minutes. Put flour on your hands to prevent it sticks.
  7. Put the bowl in an bowl with brushed oil on the side and bottom.
  8. Let the dough rise for about an hour at a warm place. (a hot wet towel on top of the bowl will help the rising)
  9. The dough will have rise double it’s size, push the dough down, to get the air out of it. Put the towel back on top of the bowl.
  10. Let it rest for another 1/2 hour,.
  11. Mix the olive oil with tablespoon crunched rosemary, some sea salt, crunched garlic cloves.
  12. Once the dough has been risen, use a large oven dish to flatten the dough in it. Do not let the dough touched the sides.
  13. Push your fingers into the dough to create little holes.
  14. Now grab the herbs with one hand and squeeze the oil out of your hand and pour it over the bread, into the holes.
  15. Leave some rosemary and garlic on the bread.
  16. Sprinkle some coarse sea salt on top of it.
  17. Put some diced black olives, finely cut red onion,  sun dried tomatoes or sweet bell pepper on top of the bread.
  18. Preheat the oven to 400F (225C).
  19. Let the dough rest for another 15-20 minutes.
  20. Bake the bread for 20 minutes or until it is golden brown.

Eet smakelijk, have a great meal with this side dish!
