Vegetable Box Salad
Ingredients:
4 servings:
- 200 gram plain low fat yoghurt
- 100 gram mayanaise
- 2 tbs Dijon mustard
- 2 tbs Lemon juice
- 2 tbs celery salt
- salt and black pepper
- 500 gram uncooked fresh white corn kernels
- 600 gram tomatoes
- 1 can kidney beans, drained
- 800 gram roman lettuce or iceberg lettuce, chopped in small slices
- 1 cumcumber, washed and sliced
- 8 fresh basil leaves, chopped
- 300 gram cheddar cheese, cut into 1/4 inch cuts
- 3 hard boiled eggs, chopped
Directions:
- Mix the first 6 ingredients in a small bowl to a dressing.
- Mix the next 8 ingredients in a large bowl and toss the dressing.
- Add some salt and black pepper if desired.
