Vegetable Box Salad

Ingredients:

4 servings:

  1. 200 gram plain low fat yoghurt
  2. 100 gram mayanaise
  3. 2 tbs Dijon mustard
  4. 2 tbs Lemon juice
  5. 2 tbs celery salt
  6. salt and black pepper
  7. 500 gram uncooked fresh white corn kernels
  8. 600 gram tomatoes
  9. 1 can kidney beans, drained
  10. 800 gram roman lettuce or iceberg lettuce, chopped in small slices
  11. 1 cumcumber, washed and sliced
  12. 8 fresh basil leaves, chopped
  13. 300 gram cheddar cheese, cut into 1/4 inch cuts
  14. 3 hard boiled eggs, chopped

Directions:

  1. Mix the first 6 ingredients in a small bowl to a dressing.
  2. Mix the next 8 ingredients in a large bowl and toss the dressing.
  3. Add some salt and black pepper if desired.
