Tomato and Sweet Onion Crumble
Ingredients:
- 1 tbs olive oil
- 2 sweet onions, thinly sliced
- 3 cloves minced garlic
- 2 pounds ripe tomatoes, cored and thinly sliced
- 8 leaves fresh basil leaves, thinly sliced
- 3 tbs chopped fresh oregano leaves
- salt and black pepper
- breadcrumbs
- 100 gram butter or margarine
- 150 gram parmesan cheese
Directions:
- Heat oil in a 24 cm frying pan
- Add onions and garlic, stir freguently, about 6 minutes.
- Pour en level onions into 2-3 inch baking dish with sides 2 inches high
- Top evenly with tomato slices, basil and oregano.
- Sprinkle generously with salt and black pepper.
- Mix breadcrumbs, butter and parmesan cheese in a bowl.
- Sprinkle it evenly over the tomatoes.
- Bake in a 350 degrees oven 20-25 minute, until tropping is golden brown and juices are bubbling.
- Cool 5 minutes before serving.
