Tomato and Sweet Onion Crumble


Ingredients:

  1. 1 tbs olive oil
  2. 2 sweet onions, thinly sliced
  3. 3 cloves minced garlic
  4. 2 pounds ripe tomatoes, cored and thinly sliced
  5. 8 leaves fresh basil leaves, thinly sliced
  6. 3 tbs chopped fresh oregano leaves
  7. salt and black pepper
  8. breadcrumbs
  9. 100 gram butter or margarine
  10. 150 gram parmesan cheese

Directions:

  • Heat oil in a 24 cm frying pan
  • Add onions and garlic, stir freguently, about 6 minutes.
  • Pour en level onions into 2-3 inch baking dish with sides 2 inches high
  • Top evenly with tomato slices, basil and oregano.
  • Sprinkle generously with salt and black pepper.
  • Mix breadcrumbs, butter and parmesan cheese in a bowl.
  • Sprinkle it evenly over the tomatoes.
  • Bake in a 350 degrees oven 20-25 minute, until tropping is golden brown and juices are bubbling.
  • Cool 5 minutes before serving.
